Blend of grenache, syrah, carignan, cinsault.
Fruit and delicacy for this lovely wine which was created by the new generation, Florent and his brother Guilhem.
Vinified without added sulphite, we like it fresh and young.
Cellaring: 1 year
Serve with: a nice platter of local charcuterie will suit it perfectly!
GRANDE RÉSERVE Red wine – AOP FAUGÈRES
Our oldest vines of carignan, grenache, and syrah.
It is a true traditional "Faugères", matured in vats.
Here it is the terroir that is highlighted: notes of small red berries, sweet spices, liquorice, garrigue (laurel, juniper...).
Cellaring: 5 to 8 years
Serve with: Rack of lamb, pigeon...
CASTEL FOSSIBUS Red wine – AOP FAUGÈRES
Grenache, syrah, mourvèdre carefully selected, sorted, and aged in oak barrels.
Little new wood, barely 15% because we don't like wood to take over the terroir - and French oak which brings finer tannins.
Cellaring: 6 to 10 years
To be served with: prime rib, bull gardiane, wild boar daube, games...
RÊVE DE NOÉ (NOAH's DREAM) Red wine – AOP FAUGÈRES
50% of a superb mourvèdre aged in new wood associated with 50% of a very beautiful syrah in barrels of 2 wines...To be wait!!...
This cuvée is only produced on exceptional vintages.
The name of the cuvée: it is often said of Noah, biblical patriarch, that he is the first winegrower in history. He cultivated the vine, not to make wine, but for food. Noah then set out on the ark with grapes. Very quickly, the grapes began to ferment in the berry.
Noah ate it and thus took the first good bender in history...and so he began to dream!
ALLEGRO White wine – AOP FAUGÈRES
A blend of Rolle (also called vermentino) and Roussanne grape varieties, matured in vats.
It is a rich, fat, unctuous, mineral wine.

FINE FAUGÈRES – IG of spirits
The first known bottles of Fine Faugères date back to the second half of the 19th Century.
It is the only eau de vie in the Languedoc region distilled with an "alambic à repasse" (Charentais type).
March 19, 1948: Fine Faugères is recognized by decree. It becomes Eau de Vie Réglementée.
It is thanks to it that the Faugères AOP wines have chosen the name "Faugères". It is therefore part of the history of our vineyard.
At Domaine Ollier-Taillefer our Fine Faugères is XO because it has spent more than 10 years in oak barrels.
We have chosen to distil all the fine lees because we believe that this gives even more fatness and richness to our fine.
No aggressiveness on the palate, but on the contrary a very "schistose" smoothness and finally a nice length.
